Breakfast!

Much like I do for lunch, I pick a breakfast meal that I’ll eat for the whole week (but I do try to switch it up every week).  I just don’t have the time or brain power to think and cook before work…and if it ain’t broke, don’t fix it, right?

The usual suspects for the week:

  • Arrowhead Mills buckwheat flakes (love this stuff!)
  • Almond milk (love this stuff too!  I usually have the unsweetened kind, but I had some help with my grocery shopping last weekend and this is what he came back with :) )
  • Nancy’s cottage cheese (I *really* love this stuff!)

DSC_7023I’ve found that the extra protein (in this case, from the cottage cheese) really stops me from feeling snacky when I get to work…which is good, because otherwise I get off the train early and go to Starbucks for something sugary.

(Note: I sometimes do this anyway!)

There’s usually a little sprinkle of ground flax on top of this, but I was tired and in a rush this morning so…no flax.

It’s also accompanied by a cup of iced coffee with almond milk, but that was gone before the camera was awake.

But no breakfast is complete without the vegetables….

DSC_7027 That’s right!  The green monster fairy visits my house too! Today’s was the standard model:

  • A banana
  • 3 medium kale leaves
  • almond milk
  • and enough water to make the thing blend

Using a whole banana makes more smoothie than I can handle before work (about twice what’s pictured here), so I end up with a good post-workout snack for later, too.  The flax (that was supposed to go on top of my cereal) used to go in the smoothie, but it was like superglue inside the blender.

After I polish off the smoothie, it’s usually time to think about putting on some earrings, realize that my bus is about to arrive, and sprint down the hall (sans earrings, of course) to catch the elevator.   I get to catch up on the news and such during my commute since I’ve made the switch to public transportation…it sure beats traffic snarls, paying for parking, and sleepy driving!
